Fluffy Blueberry Pancakes – Recipe from Lucie Lemay the 9 to 5 Foodie
If you are looking for a healthy pancake mix then look no further, this recipe is free from refined sugars and gluten and will leave you feeling great rather than in a post sugar low. I’ve included an optional superfood kick with Lucuma powder; this will add a caramel like depth to the pancakes, as well as great dose of B3 and Iron to boost your energy.
Fluffy Blueberry Pancakes
Makes 6 small pancakes
GF, DF, SF, V
- 1 free range egg
- 1 ripe banana
- ½ cup almond milk
- 1/3 cup porridge oats
- 1/3 cup buckwheat flour
- ½ tsp baking powder
- ½ tsp cinnamon
- 1 tbsp coconut oil/butter
- large handful of blueberries
- optional – 1 tsp lucuma powder
If you have a blender, peel the bananas and add the remaining ingredients and mix until smooth.
If you don’t have a blender, simply mash the banana into a pulp and then add the egg and almond milk and mix thoroughly.
Once the liquids have been mixed together add in the oats, baking powder, cinnamon and flour. For an extra superfood boost add in a teaspoon of lucuma powder.
Heat a teaspoon of coconut oil/butter on a large non-stick frying pan.
Once the oil/butter has melted, add a ladle full of pancake mix to the pan and sprinkle over a few blueberries.
After a few minutes, flip over the pancake and cook the other side.
Repeat until you finished all of the mixture, this usually makes 6 small pancakes.
Serve with a few blueberries, coconut flakes and maple syrup.
